Keto Chicken Stew
Healthy stew never tasted so good! Filled with whole foods that nourish your body, this stew also has the unmistakable zing of ranch seasoning!
I love the combination of chicken and ranch, don’t you? Some of my favorite variations include keto chicken ranch roll-ups for lunch, keto chicken bacon ranch pizza for when the cravings strike, or keto chicken bacon ranch casserole for dinner.
You just can’t go wrong with chicken and ranch!
Crockpot Chicken Stew
The other thing I love about this recipe is that you can make it in the slow cooker. It only takes four hours to fully cook the chicken. As it cooks, the aromas will fill your kitchen and make you so very hungry. It’s worth it!
I love making slow cooker recipes on busy days but this isn’t just a dump and cook recipe. There is one extra step to this recipe.
I suggest searing the chicken in a skillet first. This will do two things.
It will lock in the juices, so the chicken retains its flavors. It also prevents the chicken from overcooking and falling apart in the slow cooker.
Ranch Chicken Stew
There are just 3 grams net carbs in each bowl of stew. It’s so creamy and filling that you’ll be shocked that there is just three grams!
This is the perfect stew to enjoy on cold or rainy days. And the kale is such a fantastic source of iron and antioxidants, that this soup is also really good to eat when you feel under the weather.
If it’s almost dinner time, you can make this on the stove, too. Pre-cook the chicken in a skillet. Then, add all the ingredients to a soup pot. Heat to to a low boil and then let it simmer for about 30 minutes.
If you want the juiciest pieces of chicken, I suggest using chicken thighs. Chicken breasts will dry out too much when you sear them.
If you are running really short on time, cut up a rotisserie chicken and add the shredded meat to the soup.
What To Eat With Stew
The cream and ranch flavors in this stew pair with almost any side that you eat with it. Keto Christmas salad is made with tomato, cauliflower, broccoli, and bacon. It’s delicious!
If you’re eating this stew for lunch, then make some keto sweet and spicy bacon wrapped little smokies to go with the stew. They are both fun to eat and filling.
Then, for some veggies, make keto spicy green beans. They go with everything!

You can also freeze creamy chicken stew, too! Let it cool completely, then place it in a freezer-safe and resealable food storage bag.
Put the bag of stew on a baking tray and place it in the freezer. After it’s frozen solid, remove the baking sheet. Keep it in the freezer for up to six months.

Directions
Add the olive oil to a skillet over medium high heat. Sear the chicken pieces, and then pour into the Crockpot.
Place the celery, onion, carrots, garlic, ranch seasoning, chicken broth and salt and pepper to taste into the crockpot with the chicken.
Cover and cook on low for 4 hours. Remove the lid, and add in the heavy whipping cream and kale. Stir to combine.
Cover, and cook on high for 1 hour.
